Once the oil is hot, add in the shiitake mushrooms and cook for about 15 minutes, stirring occasionally, or until the mushrooms have become golden brown. Add in onion, garlic, salt, and pepper and sauté for another five minutes, just long enough to take the raw edge off of the onions and garlic. Top with chopped green onion and serve! Enjoy.
