Homemade Instant Banku Homemade Recipe/ without fermenting the Corn / Ndudu by Fafa
HOW TO PREPARE BANKU WITHOUT FERMENTED CORN & CASSAVA DOUGH
INGREDIENTS
250g of Corn Meal
250g of Gari
500ml of Water
Salt to taste
In the name of improvising and making the most of what ingredients I have, I ended up creating this alternative Banku recipe.
I used Corn/ Maize meal and Gari (fermented, dried and grated Cassava) for this recipe.

Can you mix the corn meal and gari and ferment for a few days just to get a stronger flavour and more nutrients ..this is my dukuna when wrapped and boiled with a twist of sugar and pumkin spices and coconut have to wrap and boil though ...
