Busy work weeks sometimes leave us feeling like we need to grab a quick takeout meal. This recipe is so incredibly easy to make, and is so perfect for meal prepping. Make a double or triple batch and chop up and put in stir fry recipes, on salads, wraps or simply serve it with rice or cauliflower rice. The taste of this dish mimics savory takeout restaurants. Restaurants can be expensive, and the quality of the pork and other ingredients cannot compare to preparing this easy and delicious dish in your own kitchen. There are several products on the market today that mimic honey. Here are a few suggestions for you to check out for yourself: 1. Nature's Hollow Sugar-Free Honey Substitute 2. Pyure Organic Harmless Hunny, Sugar Free, Honey Alternative Sweetener 3. Honeytree Honey, Sugar Free Imitation I have not personally tried any of these options, but they received great reviews on Amazon. The amounts of the granulated sweetener and the honey substitute may be different than the amounts I'm using in this recipe. I suggest following the instructions on the label, and tasting the mixture prior to glazing the pork. INSTRUCTIONS: 1. Trim fat from pork and place either in a large ziplock bag, stasher bag or in a large glass container. Mince garlic. In a small bowl combine all marinade ingredients and stir. Pour over pork and marinate for at least 2 hours, overnight is best. 2. Preheat oven to 400F. Remove tenderloin from container or bag and discard marinade. Place pork on a baking sheet lined with parchment, foil or silicone mat. Roast for 20 minutes. Remove from oven and flip over. Cook for 8 minutes. Increase heat to 450F. Flip pork over. Combine glaze ingredients in a small bowl and brush pork with mixture. Return to oven and cook for 5 minutes. Remove from oven and flip over. Apply glaze to this pork side, and return to oven for 5 minutes. Repeat this process until pork internal temperature reaches 145F, then apply final glaze and roast for 2 minutes. Allow pork to rest for 5-8 minutes prior to slicing. Enjoy!
